Executive Chef of LeVeL33 Jake Kowalewski has over 17 years of international experience from working in kitchens of fine dining restaurants, hotels and resorts, including with award winning chefs such as Luke Mangan. His produce-focused culinary approach showcases the quality of the ingredients with inspiration drawing from his experiences with different cultures and from his origin roots in Australia.
Having joined LeVeL33 in 2021, Chef Jake expanded the culinary identity of LeVeL33 by incorporating his produce-focused approach with the core values of the brand being sustainability & craftsmanship. From working with local producers to upcycling typically discarded elements of the produce, each menu reflects “Contembrewery” cuisine, defined as the creative use of beer elements and its brewing by-products with a wholehearted push towards sustainable dining – it is penthouse dining with a purpose!
