With over 20 years of experience, Chef Vun Yian Ping brings a purpose-driven culinary philosophy to his role as Executive Chef at Fairmont Singapore and Swissôtel The Stamford. He oversees the culinary operations of 12 restaurants and bars, as well as Raffles City Convention Centre, where he leads innovation, sustainability, and operational excellence across the hotels’ kitchens.
Chef Vun’s approach to cuisine is rooted in balance — respecting ingredients, honouring culinary traditions, and evolving them with modern techniques. His time in Yunnan, China (2017–2020) deepened his understanding of Asian flavours and continues to shape his approach today.
In his current role, he spearheads large-scale banquet and convention catering, engineers menus, and ensures profitability through strategic cost management and thoughtful menu planning, all while upholding brand standards and delivering exceptional guest experiences.
Chef Vun has received multiple accolades throughout his career. In the recent year, Chef Ming has been awarded Best Executive Chef of the Year 2025 at the Singapore Culinary Association Excellence Awards 2025. His other awards and accolades include a Gold Medal at the FHA Singapore “Catch of the Day” (2014), a Silver Medal in the same category (2012), and Champion at the China Gastronomy Molecular Cooking Competition in Guangzhou (2019). He has served as a judge at the Malaysia World Chef Championships (2019) and THAIFEX Thailand Ultimate Chef Challenge (2025), and is a Committee Member of the Chef Association (2025) as well as a Professional Chef Member of the Chaine des Rôtisseurs (2024).
Dedicated to sustainability, Chef Vun oversees food waste reduction initiatives that align with the hotels’ environmental goals. His passion for the culinary arts is reflected in his continual pursuit of refined techniques and meaningful dining experiences. He believes great food tells a story and brings people together. Outside the kitchen, he finds inspiration through travel and the discovery of new flavours, and enjoys swimming and spending time with his family.
