About

Chef Pinaki joined the Yantra kitchen from JW Marriott, where he served as Executive Sous Chef for over four years. During his tenure there, he was part of the opening team and played a crucial role in managing costs, solving operational challenges, and delivering premium quality dishes. His work involved close collaboration with the front-of-house service team, ensuring a seamless dining experience for guests.

Before his time at JW Marriott, Chef Pinaki gained extensive experience at some of the world’s leading and award-winning restaurants. His impressive career includes positions at Singapore Marriott Hotel Tang Plaza, Fullerton Hotel, Sun International (Suncity Complex), South Africa; Tiffin Room and Doc Chengs’ at  Raffles Hotel, Singapore; and renowned Indian establishments such as RAGA and 6 Ballygunge Place  in Kolkata. His diverse background and expertise have significantly contributed to his reputation as a highly skilled and versatile chef.

Chef Pinaki brings a fresh perspective to classic Indian recipes at Yantra, blending his innovative cooking techniques with his extensive knowledge of Asian cuisine. With over 28 years of experience, he excels in Indian, Chinese, and Japanese cooking. At Yantra, Chef Pinaki aims to take diners on a culinary journey that melds the rich traditions of Indian cuisine with a touch of contemporary finesse.

Chef Pinaki’s passion for cooking began at a young age in his hometown of Kolkata, Bengal, a vibrant culinary destination in India known for its aromatic, spice-driven, rich, and bold flavors. Inspired by the diverse and flavorful cuisine of his region, he pursued formal training in the culinary arts. He graduated with First Class honors from the Institute of Hotel Management Catering Technology and Applied Nutrition in Kolkata, earning a Diploma in Hotel Management Catering Technology and Applied Nutrition.

At Yantra, Chef Pinaki’s works with renowned food historian Ms. Pritha Sen with the aim of bringing forth regional and lost recipes of India. Their goal is to reimagine traditional Indian dishes, elevating them with his unique culinary style. Ms.Pritha’s deep knowledge of Indian regeonal cuisine helps to bring many recipes  which are getting lost with time.
His innovative approach and deep understanding of various Asian cuisines promise to offer diners an exceptional and memorable dining experience. Through his work at Yantra, Chef Pinaki and Pritha Sen continues to celebrate and innovate, honoring the legacy of Indian cooking while introducing exciting new flavors and techniques.
