His culinary journey includes holding pivotal roles such as Executive Chef at Brasserie Louis in Jeddah, Saudi Arabia, at the renowned So France in Singapore and as an executive Chef for French Food Matters, in charge of 6 restaurants between Shanghai, Ho Chi Minh City and Hong Kong.
Nicolas remains committed to sharing his extensive knowledge of French produce and recipes in an unpretentious, relaxed, and convivial environment. He strives to introduce lesser-known regional and seasonal French specialties to an international audience.
