In 2011, Chef Lamley Chua joined 1-Group at Stellar at 1-Altitude, a premier dining venue in Singapore, where he played a pivotal role in developing contemporary sushi menus. His work went beyond sushi preparation, involving creative innovations that showcased his growing expertise in Japanese cuisine.
Lamley’s career further distinguished itself when he became Sous and Sushi Chef at LP + Tetsu, a French-Japanese fine dining restaurant led by Michelin-starred Chef Laurent Peugeot. At LP + Tetsu, Lamley’s contribution was instrumental in earning the restaurant its Michelin Star in 2013, demonstrating his talent for integrating French
and Japanese culinary techniques into a harmonious dining experience.
Following this achievement, Lamley embraced the challenge of leading the openings of FLNT and FIRE at 1-Atico. At FLNT, he showcased his ability to blend Japanese and Peruvian flavors through Nikkei cuisine, overseeing all aspects of restaurant and kitchen operations to create a unique and innovative dining experience.
