Chef Felix Chong is 1-Group’s Culinary Associate Director for Mediterranean Cuisine, with over 20 years of experience leading acclaimed Italian kitchens across Asia. Known for his “made-from-scratch” approach, Felix elevates classics through artisanal precision and thoughtful creativity, crafting everything from pastas and breads to cultured butter in-house.
Felix’s career has included tenures at Forlino, Senso, and the Michelin-starred Otto e Mezzo in Hong Kong. He has cooked for industry titans like Jack Ma and political leaders including Goh Chok Tong, all while maintaining a deeply grounded approach that values flavour over flash. Since taking the reins at Monti, he has turned it into one of Singapore’s premier waterfront restaurants, renowned for its refined yet approachable Italian offerings.
Felix has been recognised as a Barilla Pasta Winner (2025) and is a Lambassador for Meat & Livestock Australia, advocating for Mediterranean-style versatility with Australian lamb. His leadership has brought Monti consistent accolades, from wine list distinctions to nominations for Chef of the Year at the World Gourmet Summit.
At the Grand Champagne Brunch, guests can expect his signature hand-cut pasta served from a Parmesan wheel, alongside a sumptuous spread of cheeses, cold cuts, and other Mediterranean indulgences.
