As part of Singapore Food Festival 2025, Morsels presents a one-night-only dining experience celebrating the harmony of Japanese craftsmanship and Singapore’s bold culinary soul.
This special evening will be hosted by Takashi Iwai, Director of the Noguchi Naohiko Sake Institute Inc., alongside Chef-Owner Petrina Loh.
Founded by the legendary Naohiko Noguchi, known as the “God of Sake Brewing,” the institute in Ishikawa, Japan, is dedicated to preserving and advancing traditional yamahai and kimoto brewing methods. With over 75 years of brewing mastery, Noguchi-san’s legacy lives on through the institute’s rare, artisanal sakes—each a piece of living history.
Director Takashi Iwai has been instrumental in the institute since its founding. Beginning his career in sake brewing and sales at just 24, he later helped establish the institute before being appointed Director in 2023. His visit to Singapore marks a rare opportunity for guests to hear firsthand insights into Noguchi’s philosophy and the artistry behind these remarkable sakes.
Chef Petrina Loh complements this heritage with a specially curated Japanese-fusion menu layered with Singapore flavors—soulful broths, bold ferments, and modern interpretations of local classics. Each dish will be paired with Noguchi’s exquisite sakes, from the refined elegance of junmai daiginjo to the soulful depth of yamahai muroka nama genshu.
