Chef Sebastian Feldbacher
A Distinctive Dining Experience Rooted in Place

For this year’s Singapore Food Festival, Le Pristine Singapore at Grand Hyatt Singapore presents a menu that reimagines local flavours through a modern European lens. Conceptualised by Chef Sergio Herman and led by Chef Sebastian Feldbacher, the experience journeys from Irish Mór Oyster with Asian Mule dressing to Chilli King Crab Pizzette and a vibrant Lobster Salad. Sergio’s Father’s Fish Soup offers a heartfelt nod to heritage, while the Baba “Singapore Sling” playfully reinvents a national icon. Paired with locally roasted coffee and a rooftop garden pandan tea infusion, the menu celebrates Singapore’s culture with elegance and creativity.

About Hyatt

Hyatt’s global food & beverage philosophy is grounded in three key principles: Healthy People, Healthy Planet and Healthy Communities. “Food. Thoughtfully Sourced. Carefully Served” guides our culinary team as they craft all our menu offerings, built on the foundation of providing food and beverage options that are good for people, the planet and communities. We prioritise purchasing seafood with credible certifications from councils such as Marine Stewardship Council and Aquaculture Stewardship Council. We focus on the most effective way to reduce food waste—prevention—by limiting overproduction, matching purchases closely with expected demand, and managing portion size.
